Over Thanksgiving I came up with the best pancakes ever because while cooking from scratch I had to improvise a few ingredients. The other day, I wanted spaghetti, but we were out of sauce. I don't know how to make spaghetti sauce from scratch, but I did have tomatoes, olive oil and some spices. So, I cut up the tomatoes in small chunks, sprinkled dried basil and garlic salt on them, and cooked them up in the olive oil in a skillet. It wasn't looking too tasty so, I took a slotted spoon and mashed the tomatoes to give it more of a spaghetti sauce look. Yum!
Tomorrow, the the kids are going to have pizza, but I'm going to refine my new sauce. I've got fresh basil, fresh garlic and some campari tomatoes (never had them, but apparently they are the "foodies choice"). As always, I'll be adding it to whole wheat pasta. And of course, I'll have to make a trip to the new Trader Joe's for a bottle of wine.
